My heating goes from freezing to roasting without touching the dial.

I'm guessing that would have more to do with the unit itself. Touch wood, I've not had any problems with mine so not sure but would a re-learn procedure help it to find its feet? It's pricing depends on what is involved. If it is the unit itself, then these have been going on ebay for about £60-£80. Well that's the cheapest I've seen them anyway...
If you wanted to give the relearn procedure a try, then there is a very good sticky in the Tech section of FS-OC made by dan the man lol! It probabily wont have any effect, but I guess it's worth a try? Sorry I can't help anymore than that mate
Did you remove that little plastic black bobble piece before you started experiencing the problem and how long have you had the problem for? Could be a resistor or relay gone or something (Not an electronics guy so could be way off here).

Is your heating acting strangly when the "Aircon" is on or off?
as it may be you need the system regassing if it happens when its on.
Also a minor thing, check your cabin filter isn;t blocked,

well yeah, some of them are real croocks, but tbh that garage in particular has allways been true to me, they told me it was the immobilisers bit, might be wrong, it might be a sensor for the clima...![]()
